Smoked Haddock with Roast Vegetables and Quinoa

So easy, perfect summer food, one of your two a week fish dishes.

Roast some vegetables, add a portion of smoked haddock 10 minutes before the end of cooking time.

When the haddock is cooked simply flake haddock into the vegetables and discard the skin.

Add a little double cream, perhaps grate a little cheese, serve with quinoa, salad and a sprinkle of pomegranate seeds.
