Potato Rösti With Smoked Salmon

Golden, crispy pan-fried potato patties are the perfect base for a mouthwatering combination of our velvety smoked salmon, creamy crème fraîche, fresh avocado, and fragrant dill. This elegant dish is made for two and promises to turn any meal into a memorable dining experience.

Ingredients

  1. 300g Alfred Enderby Smoked Salmon thinly sliced
  2. 400g potatoes peeled & coarsely grated
  3. 1 medium egg, beaten
  4. 1 tsp plain flour
  5. ¼ tsp baking powder
  6. ½ small onion, finely chopped
  7. 3 tbsp sunflower or vegetable oil, for frying
  8. 200g crème fraîche
  9. small bunch of chive
  10. 1 avocado
  11. chopped dill

Salt and pepper to season

Method

  1. Squeeze the excess water out of the grated potatoes, then tip into a bowl and mix well with the egg, flour, baking powder, onion and chopped sage leaves. Season well. In a large non-stick frying pan heat 2 tbsp of oil over a medium heat, and spoon the mixture in to make two röstis, flattening them down with the back of a spoon into disc shapes. Cook for 5 mins each side until golden brown and crisp, then drain on kitchen paper. 
  2. Slice the smoked salmon into slices and place on top, add half of the avocado to each rösti, add a dollop of creme fraiche & chive.
  3. Drizzle some lemon and finish it with the dill.
