Potato Rösti With Smoked Salmon

This popular Nordic dish of pan-fried, golden potato patties makes a delicious dish for two – topped with our smoked salmon, crème fraîche, avocado & dill.
Ingredients
- 300g Alfred Enderby Smoked Salmon thinly sliced
- 400g potatoes peeled & coarsely grated
- 1 medium egg, beaten
- 1 tsp plain flour
- ¼ tsp baking powder
- ½ small onion, finely chopped
- 3 tbsp sunflower or vegetable oil, for frying
- 200g crème fraîche
- small bunch of chive
- 1 avocado
- chopped dill
Salt and pepper to season
Method
- Squeeze the excess water out of the grated potatoes, then tip into a bowl and mix well with the egg, flour, baking powder, onion and chopped sage leaves. Season well. In a large non-stick frying pan heat 2 tbsp of oil over a medium heat, and spoon the mixture in to make two röstis, flattening them down with the back of a spoon into disc shapes. Cook for 5 mins each side until golden brown and crisp, then drain on kitchen paper.
- Slice the smoked salmon into slices and place on top, add half of the avocado to each rösti, add a dollop of creme fraiche & chive.
- Drizzle some lemon and finish it with the dill.
