Method

  1. Prepare the Dough: In a large mixing bowl, combine the flour, salt and olive oil. Dissolve the yeast and sugar in the warm water and let it sit for 5-10 minutes until frothy. Gradually add the yeast mixture to the dry ingredients, stirring to form a dough. Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.
  2. Let The Dough Rise: Cover the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.
  3. Prepare the Pizza Bases: Preheat your oven to 220°C (425°F). Roll out the dough to your desired thickness and place it on a pizza tray or baking sheet.
  4. Assemble the Pizzas: Spread the pizza sauce evenly across the dough. Scatter the mozzarella and grated cheddar over the sauce. Add the sliced red onion.
  5. Bake the Pizza: Bake in the preheated oven for 12-15 minutes or until the cheese is melted and bubbly, and the crust is golden brown.
  6. Add the Salmon and Finish: Add the sliced smoked salmon over the pizza and return it to the oven for another 5 minutes. Remove from the oven and sprinkle with fresh rocket leaves and chopped chives. Slice with a pizza cutter and serve with a fresh side salad for a delicious, well-rounded meal.
