BBQ Salmon & Jersey New Potatoes

A perfect summer BBQ recipe that's as simple as it is delicious. With just a handful of quality ingredients, this dish lets the flavours shine — tender Alfred Enderby smoked salmon, buttery Jersey new potatoes, and a fragrant garlic & dill butter that ties it all together.

BBQ Smoked Salmon & Jersey Potatoes

Ingredients

  1. 900g Alfred Enderby Smoked Salmon
  2. 750g Jersey New Potatoes
  3. x1 Lemon
  4. x100g butter
  5. x2 garlic cloves crushed to a paste
  6. x3/4 bunch of dill chopped
  7. Dill leaves to garnish

How to Cook

  1. To make the garlic & dill butter, mix the butter with the crushed garlic and chopped dill and stir until it forms a paste.
  2. Place the salmon portion on a piece of parchment paper and then onto a baking tray, brush with the butter and a squeeze of lemon and allow to cook slowly with the lid down.
  3. Boil the potatoes and when cooked through, use some of the butter to garnish over.
  4. Arrange the fish on a platter surrounded by the potatoes, use the rest of the butter on top, sprinkle more dill for decoration and squeeze some lemon over the fish.
