They cure their fish in the traditional way and smoke them in old smokehouses which smell gorgeous, and I’m sure this helps the flavour. They use only large haddocks and the result is a perfect balance of smoke and sweet fish.

Enderby’s of Grimsby – Traditionally Smoked Salmon.
Two versions here: A sliced side and a whole side. The sliced version had generous thick slices and both were gently smoked and nicely salted with a light oiliness that avoided dryness. Highly recommended. 4 plus stars out of five.
