Smoked Haddock & Green Beans

Smoked haddock tastes great teamed with green beans and dill. This is a recipe by @greekygirleats Joanna 2022 Masterchef contestant in and this is how to make it.


Ingredients

  1. 1 fillet of Alfred Enderby Smoked Haddock
  2. 25g butter
  3. 20g flour
  4. 250ml milk
  5. 1 lemon
  6. green beans
  7. bunch of dill
Cooking

To cook:

  1. Season the fish with salt, pepper, a squeeze of lemon and olive oil.
  2. Pre-heat your grill to 220 fan and cook skin side up for 10 minute.
  3. Then flip and cook for a further 15 minutes.
  4. Carefully take out of the oven and pop onto your preferred plate.

Joanna paired this with a parsley sauce, steamed green beans and creamed spinach (recipe in this post!) - garnish with dill for extra fragrance and flavour.

Alfred Enderby Grimsby Traditionally Smoked Fish

For the sauce

  1. Melt 25g butter in a pan over a med-low heat, then stir in 20g plain flour. Cook, stirring, for 1-2 mins until a paste forms.
  2. Gradually pour in the 250ml milk, stirring continuously until all the milk has been incorporated and the sauce coats the back of a spoon.
  3. Bring to a simmer and bubble for a minute or so...
  4. Remove from the heat and stir through the parsley. Add the juice of 1/2-1 lemon and 1tsp of preferred mustard to taste (optional).
  5. Season well with salt and pepper. Once cool, it will keep chilled for up to three days or frozen for a month.
